Delicious Banana Almond Cookies

The perfect snack that everyone can enjoy.

Who doesn't love a good cookie recipe?


We especially love this cookie recipe because it uses ingredients you probably wouldn't normally find in cookies, and it just works so well!

To keep this recipe completely gluten free/flourless, we used dried banana chips! You can make these yourself if you have a dehydrator, or purchase from the supermarket.

You will need some kind of blender or food processor for this one!

The sweetness from the dried banana chips make these cookies oh so delicious.

Ingredients in this recipe that are high in magnesium are banana, almonds and chia seeds.

To make sure most people are able to enjoy these, this recipe iscompletely flourless, gluten free, refined-sugar free and vegan!

A medium banana provides 32mg of magnesium!

BANANA ALMOND COOKIES

Makes approx 14-16  Flourless, Gluten Free,Refined Sugar Free, Vegan

INGREDIENTS

  • 1 cup almond butter
  • 1 tbsp ground chia seeds
  • 2 tbsp water
  • 1 cup banana chips
  • 1/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1 tsp baking powder
  • 1 tbsp maple
  • 1/2 tsp salt

METHOD

  • Place chia seeds into blender and grind into a powder.
  • Combine the ground chia seeds with the 2 tbsp water and stir. Let sit for 5 minutes.
  • Grind banana chips in food processor/blender. 1 cup of banana chips will be around 3/4 cup once ground.
  • Add ground banana chips and the rest of ingredients into a bowl. Mix well.
  • Chill the mixed dough in the fridge for 1-2 hours.
  • After dough hardens, roll balls into the size you would like and place on baking paper tray. Use a fork to flatten the cookies. The thinner the shape, the crispier the cookies will be. Fatter shaped cookies tend to stay soft in the middle.
  • Bake at 180 degrees C for 10-12 minutes.
  • Once out of the oven, let them cool completely before eating.
  • ENJOY!
