Coconut Panna Cotta

A delightful dessert that everyone can enjoy!

This delicious and completely guilt-free Panna Cotta recipe is sure to impress! The hero ingredients here are coconut and raspberry - a match made in heaven.

Yes, you read that correctly!

These scrumptious treats can boost your magnesium levels! Coconut cream is a good source of several vitamins and minerals. One cup of coconut cream is equivalent to 22% of the recommended daily intake of Magnesium!

Raspberries are among the list of fruits highest in Magnesium - so this recipe is a double whammy!

BONUS: These are also vegan, gluten free and sugar free (in case you needed another reason to love them).

COCONUT PANNA COTTA

Makes approx. 4  Gluten Free, Sugar Free, Vegan

INGREDIENTS

  • 1 can coconut cream
  • 1 tsp agar agar
  • 3 tbsp maple syrup
  • 1 tsp lemon zest
  • 2 teaspoon vanilla extract

Raspberry Sauce

  • 2 cups frozen raspberries, defrosted
  • 2 tbsp maple syrup
  • 2 tsp cornflour
  • 3 tbsp water

Toppings (optional)

  • Sliced fresh strawberries
  • Coconut flakes

METHOD

  • Place the can of coconut cream into a saucepan with the agar agar powder. Heat over medium heat
  • Add maple syrup and vanilla extract, and continue stirring.
  • Keep on medium heat for approx 10 minutes, stirring occasionally.
  • At the end of the 10 minutes, stir through the lemon zest and remove from heat.
  • Pour into 3-4 glasses and set in fridge for about 2-3 hours. You can speed this process up by putting them in the freezer and just keep an eye on them so they don't freeze over! Half an hour should suffice in freezer.
  • While the base is chilling, start on the raspberry sauce. Add the raspberries, maple syrup and 1 tbsp of water into a saucepan and heat until it becomes like a sauce.
  • Place the cornflour into a glass and add the remaining 2 tbsp of water, and stir in together.
  • Add this cornflour mix to the raspberry sauce and stir.
  • Sauce should thicken quickly after adding the cornflour. Turn off heat once thick.
  • Once the bases have set, pour/spoon the raspberry sauce onto the top layer.
  • Top with some coconut flakes and cut up fruit of choice for garnish.
  • Enjoy!
