Holy Moly Guacamole

A twist on the classic

This recipe is a twist on the classic guacamole, with a couple of extra ingredients to take the flavour up a notch. You will love this one!


Guacamole is a popular Mexican avocado-based dip.

Some people would go as far as to say that no Mexican meal is complete without it!

 

Avocados, when paired with the right ingredients, are most definitely a treat for the taste buds.

The avocado is an incredibly nutritious fruit and a tasty source of magnesium.

Avocados are also high in potassium, B vitamins and vitamin K. And unlike most fruits, they’re high in fat.

Studies have shown that eating avocados can reduce inflammation, improve cholesterol levels and increase feelings of fullness after meals...you can't go wrong!

 

One medium avocado provides 58 mg of magnesium, which is 15% of the RDI

GOURMET GUACAMOLE

Serves 4-6    Vegan

INGREDIENTS

  • 3 medium sized avocados
  • 1/2 small red onion, diced finely
  • 1 red tomato, diced
  • 1/4 cup coriander, finely chopped
  • 1 1/2 tbsp fresh lime juice
  • 1 tbsp fresh lemon juice
  • 1/2 tsp sea salt
  • 1/8 tsp cracked pepper
  • 1/2 tsp ground cumin

METHOD

  • Cut avocados in half, remove seed and scoop out the flesh.
  • Add to a medium mixing bowl
  • Mash the avocado with a fork (not too much, some chunks are good)
  • Add all other ingredients (red onion, tomato, coriander, cumin, salt, pepper, lime and lemon juice)
  • Mix with a large spoon or fork until blended
  • Taste to make sure there is enough salt and pepper for your liking and add more if needed
  • Serve and eat immediately for the freshest taste.
  • If you plan on eating later, press some baking paper down on the top of guacamole (make sure no air is exposed) to help it last longer.
